ผมจึงปรับเปลี่ยนวิธีทำให้ง่ายขึ้น แถมยังนำมาผสานกับอีกเมนู ขนมผักกาด ได้เป็นเมนูนี้ ขนมกุยช่ายผักกาด
ส่วนผสมที่ต้องเตรียมมีดังนี้ หัวไชเท้า 200 กรัม, กุยช่าย 90 กรัม, น้ำมันรำข้าว 4 ช้อนชา, เห็ดหอมสด 55 กรัม, กุ้งแชบ๊วย 80 กรัม, โชยุสีอ่อน 2 ช้อนชา, แป้งข้าวเจ้า 100 กรัม, แป้งข้าวเหนียว 100 กรัม และเกลือสำหรับปรุงรสตามต้องการ ในส่วนน้ำจิ้มต้องเตรียม ซีอิ๊วดำหวาน 2 ช้อนโต๊ะ, โชยุสีอ่อน 1 ช้อนโต๊ะ, น้ำส้มสายชูข้าว 2 ช้อนโต๊ะ และพริกชี้ฟ้าแดง 1 เม็ด ส่วนประกอบของหัวไชเท้า ก่อนอื่นต้องปอกผิวออกก่อน โดยต้องปอกให้ลึกนิดหนึ่งเพื่อไม่ให้มีรสขม เริ่มจากการปอกผิวนอกก่อน ถ้าไม่แน่ใจเท่าไหนว่าลึกพอดีแล้ว ให้ปอกซ้ำอีกครั้งหนึ่ง เสร็จแล้วนำหัวไชเท้าไปฝน

ตั้งกระทะใบย่อมใบหนึ่ง ใส่น้ำมันรำข้าวลงไปประมาณ 2 ช้อนชา เมื่อกระทะเริ่มร้อนให้ใส่กุ้งและเห็ดลงไป ปรุงรสง่ายๆด้วยเกลืออย่างเดียว ยิ่งผัดเห็ดจะยิ่งหดเล็กลงและเนื้อจะหนึบเหนียวขึ้น นำเห็ดและกุ้งที่ผัดออกมาพักไว้ให้คลายความร้อน ส่วนกระทะไม่ต้องล้างทันทีเดี๋ยวต้องใช้ต่อ ก่อนที่จะนำกุ้งและเห็ดไปผสมต้องให้เย็นสนิท ดังนั้นนำไปแช่ในตู้เย็นช่องแช่แข็งประมาณ 3 นาทีก็เพียงพอ ขั้นตอนต่อไปเราจะทำเนื้อขนมผักกาด ส่วนการปรุงรส ปรุงง่ายๆด้วยซีอิ๊วขาวหรือ light color soy sauce หมายความว่าเป็นโชยุสีอ่อนซึ่งผลิตจากถั่วเหลืองและข้าว เรียกได้ว่าเป็นซอสปรุงรสที่มีรสครบทุกอย่างเลย เทใส่ถ้วยสำหรับผสมทั้งหมด 2 ช้อนชา ใส่หัวไชเท้า แป้งข้าวเจ้า แป้งข้าวเหนียว กุยช่ายรวมกันในถ้วย ขยำและนวดให้เป็นก้อน ในตัวหัวไชเท้าจะมีน้ำอยู่ทำให้ทุกอย่างเข้ากันได้ นำกุ้งและเห็ดที่เย็นแล้วมาใส่รวมด้วย ขยำรวมกันให้แป้งมีเนื้อสัมผัสที่สามารถเกาะเป็นชิ้นได้ ถ้าแห้งไปให้เติมน้ำสะอาดทีละ 1 ช้อนชา สัมผัสด้วยมือ ถ้าปั้นเป็นก้อนได้ถือว่าใช้ได้แล้ว ส่วนประกอบจะนุ่มๆ

ถ้าเป็นขนมผักกาดทั่วไป เขาจะใส่พิมพ์แล้วเอาไปนึ่งซึ่งใช้เวลาสูง ผมจะใช้เทคนิคในการทำเกี๊ยวซ่าคือกึ่งนึ่งกึ่งทอดมาทำให้สุก ก่อนอื่นต้องม้วนกลิ้งแป้งให้ออกมาแถวยาวแล้วตัดแบ่งให้เป็นชิ้นเท่าๆกัน สูตรนี้จะได้ประมาณ 18-20 ชิ้น นำแต่ละชิ้นมาปั้นเป็นก้อนแล้วกดให้แบนลง ตั้งกระทะใบเติมและเติมน้ำมันรำข้าวประมาณ 2 ช้อนชา เมื่อกระทะร้อนแล้ว เอาขนมกุ้ยช่ายลงกระทะ เขย่าเล็กน้อยเพื่อให้ได้สี หลังจากนั้นใส่น้ำลงไปและปิดฝาเพื่อนึ่งให้เนื้อขนมสุกที ระหว่างรอมาผสมน้ำจิ้มกัน ใช้ความหวานของซีอิ๊วดำ 2 ช้อนโต๊ะ แล้วใส่โชยุสีอ่อนลงไปประมาณ 1 ช้อนโต๊ะ คนให้เข้ากันและชิมปรับรส ถ้าชอบรสเผ็ดแนะนำให้ผสมพริกจินดาหรือพริกขี้หนูลงไปด้วย จากนั้นใส่น้ำส้มสายชู 2 ช้อนโต๊ะ รวมกับพริกชี้ฟ้าก็จะได้น้ำจิ้มง่ายๆเรียบร้อย กลับมาดูขนมในกระทะ เปิดฝาเมื่อปิดครบ 3 นาที จะเห็นว่าขนมสุกและตัวแป้งจะมีลักษณะใสทั้งชิ้นคล้ายเกี๊ยวซ่า หลังจากนั้นให้กลับด้านจี่ประมาณ 1 นาทีเพื่อให้ได้สีน้ำตาลสวย สวยแล้วนำมาจัดใส่จาน เป็นเมนูสนุกสบายทำไม่ยาก นี่คือขนมกุ้ยช่ายผักกาด
